2013 is an exciting vintage for Sauvignon Blanc with terrific balance of flavour, texture and acidity. The wines are pungent but composed considering a relatively warm February.
The grapes are machine harvested in the cool of night, crushed and pressed and settled for three to four days. The juice is then racked and fermented in a combination of tank and cask and the lees are stirred regularly until spring for complexity and flavour.
